i am a huge fan of rasam recipes, particularly the udupi saaru recipe is my personal favourite. back in my hometown (udupi), we make rasam with just tamarind juice, jaggery, toor dal and most important one udupi saaru pudi spice mix. unlike in other rasam variants, where tomatoes take a significant role to derive the taste and flavour. the spice mix and tamarind juice take precedence in this recipe. as a matter of fact, to make this rasam, the tamarind juice is boiled thoroughly with jaggery chilli and salt. during this process, it discharges all its raw flavour and when mixed with rasam spice mix, it yields one of the best rasam recipes.

Ingredients

  • 2 tsp coconut oil
  • 1 cup (75 grams) coriander seeds
  • ¼ cup (25 grams) cumin seeds
  • 2 tbsp (20 grams) methi
  • ½ cup (10 grams) curry leaves
  • 100 gram dried red chilli
  • 1 tsp turmeric
  • 1 tsp hing / asafoetida

Instructions

  • firstly, in a heavy-bottomed pan heat ½ tsp coconut oil and saute1 cup ((75 grams)) coriander seeds.

  • saute on low flame until the coriander seeds turn aromatic.

  • transfer to a large plate and keep aside.

  • in the same pan heat ½ tsp coconut oil, add ¼ cup ((25 grams)) cumin seeds and 2 tbsp ((20 grams)) methi.

  • roast on low flame until the spices turn aromatic.

  • now add ½ cup ((10 grams)) curry leaves and roast well.

  • roast until the curry leaves turn crisp.

  • transfer to a large plate and keep aside.

  • further heat 1 tsp coconut oil and saute100 gram dried red chilli.

  • saute until the chills puff up and turn crisp.

  • transfer to a large plate and cool completely.

  • now take all the roasted spices to the mixi, add1 tsp turmeric and 1 tsp hing.

  • grind to a fine powder.

  • finally, udupi style rasam powder or saar pudi is ready to prepare udupi saar.
