In a large pan add olive and, chicken, and some cajun seasoning. Once the chicken is done cooking, remove it from the pan and set it aside.

SEASONING AND COOKING THE CHICKEN

  • 300 grams chicken cut into small cubes
  • 2 tablespoon olive oil
  • ½ teaspoon Cajun spices

FOR THE SOUP

  • 1 medium onion chopped
  • ½ teaspoon onion powder
  • Salt to taste
  • ½ teaspoon black pepper powder
  • 1 teaspoon paprika
  • ¾ cup enchilada sauce
  • 3 ½ cup chicken stock low sodium
  • ¼ cup +1 tablespoon masa harina
