21 Day Fix Buffalo Chicken Pizza is a healthy version of the pizzeria favorite!Use precooked chicken to serve this up in no time! This post may contain affiliate links for products I’m obsessed with.
Confession #109 – I’ve been on a pizza kick.
It started a couple of weeks ago when my husband and I went to this Pizza Cafe in the Philadelphia neighborhood where we met and then lived for the first ten years of our life together.
So many memories from those years.
Our first date. Getting engaged. Buying our house. Having our daughter.
And Pizza.
Lots and lots of Pizza.
Our favorite Friday night take out was from The Couch Tomato Cafe, which opened right about the same time as my husband and I started dating. And I’m pretty sure it was there that I had my first slice of Buffalo Chicken Pizza.
Oh my heavens.
One bite and this New York pizza snob was smitten…and while my relationship with my husband was just beginning, so was my love affair with The Couch Tomato.
Anyway, since our recent stop there a few weeks ago, where we felt very old next to all the adorable twenty-somethings, I have made my own Fix approved Buffalo Chicken Pizza several times.
But it is pretty freaking delicious in it’s own right. So I thought it was about time I shared it here…in case you are all on a pizza kick, too.
I use whatever whole grain wraps, tortillas, or flatbread that I might have in the house for my 21 Day Fix Approved Pizzas and I just toast them in the oven a bit before adding the toppings. For this, I started with some blue cheese infused ricotta as the base.
Then I added some buttery chicken and hot sauce, more blue cheese, mozzarella, and some diced up red onions.
Bake until bubbly and then voila! Spicy, creamy, and oh-so-delicious pizza all for you. This smelled so amazing, I started munching even before I finished taking pictures.
Anyway, I plan to share more pizza recipes while I am currently obsessed, but check out myTaco Pizzaand mySpinach and Artichoke Pizzain the meantime! Enjoy!

Spray wrap or flat bread with olive oil spray, then toast in a 375 degree oven until it begins to crisp. I usually place mine right on the oven rack. Remove from oven and turn oven up to 400 degrees.
Mix 2 T of ricotta cheese with 1 T of blue cheese. Sprinkle with garlic powder and spread mixture onto pizza crust.
Heat butter in a skillet over medium-low heat and add diced chicken and hot sauce. Cook for a few minutes to let the flavors combine, then spoon chicken and hot sauce onto the ricotta/blue cheese layer.
Top with remaining blue cheese, mozzarella, diced red onion, and parsley. Bake pizza on a baking sheet or pizza stone for 4-5 minutes or until cheese is bubbly and brown.
Buffalo Chicken: grilled chicken breast, fresh onions, provolone, American cheese, cheddar, and cheese made with 100% real mozzarella — all drizzled with a hot buffalo sauce.
Mix chicken, hot sauce, and melted butter in a bowl until well combined. Place crust onto a rimmed baking sheet or pizza pan. Spread salad dressing over crust, then top with chicken mixture and sprinkle with mozzarella. Bake in the preheated oven until crust is golden brown and cheese is bubbly, about 5 to 10 minutes.

Have you ever heard of Buffalo-style pizza? A series of recipes and descriptions gathered from AllRecipes and Visit Buffalo Niagara agree that it's got this in common — cup and char pepperoni, sweet sauce, lots of cheese and a crust that's not quite thick, but not as thin as what you'd find downstate.
This spicy, flavorsome dish traces its origins back to Buffalo, New York, in 1964. The story, as most recount it, unfolds with an impromptu late-night creation by Teressa Bellissimo, who was looking to prepare a quick, easy snack for her son and his friends.
It has gained a loyal following due to its signature thick, airy crust, tangy sauce, and distinctive cup-and-char pepperoni. The crust is often referred to as “spongy” or “bready” due to its light and fluffy texture.
However, it is widely believed that buffalo chicken pizza was first served in the United States in the 1980s or 1990s, with some reports pointing to Buffalo, New York as the birthplace of this dish.
What's the healthiest pizza to eat? There are plenty of pizza choices that can be considered healthy. Some options that can easily fit into a nutritious and balanced diet include a thin-crust pizza and a cauliflower-crust pizza. Topping choices on the more nutritious side are vegetables, chicken, shrimp and cheese.
Pizza is high in saturated fats due to cheese and processed meat toppings, which can increase your cholesterol levels as well as risk for heart disease. Eating three-four slices of pizza or more, on a regular basis, can have detrimental health consequences.
The sauce is unusually and distinctively sweet, and the cheese is more flavorful than most pizza mozzarella. The dough is very light and airy given its thickness, and the outside crust edge is significantly crisper than the base, as is the mozzarella cheese near the outside edge.
Avoid processed meats: Swap processed meats like pepperoni and bacon for a healthier source of protein like grilled chicken. Go for whole-grain: Opt for whole-grain crusts to increase fiber content. Choose sauce with no added sugar: Choose brands that contain no added sugar to keep sugar content to a minimum.
Chicken is an exception, as it is a healthy choice for all. It does not have a lot of fat in it, and it is easy to digest. Thanks to these qualities, it not only provides you with great taste but a healthier option for those times when you really need a slice of pizza.
Hot Buffalo Sauce is — you guessed it! — Domino's own spicy Buffalo sauce made hotter with aged red cayenne peppers. Blue Cheese has bits of aged blue cheese (of course). Creamy buttermilk Ranch has hints of garlic and onion.
Finally, take your time with toppings. Meat choices include Italian sausage, pepperoni, and grilled chicken, while our most popular non-meat toppings include black olives, green peppers, diced tomatoes, and onions.
What truly sets Buffalo-style pizza apart is the sauce. Known for its slight sweetness and vibrant tomato flavor, the sauce is applied generously all the way to the edge. It strikes the perfect balance between tangy and sweet, elevating the overall taste experience.
